Pulse vanilla wafers and almonds in food processor until crumbly. Add melted butter and pulse again until combined.
Press into a 9-inch pie plate. Bake at 350 for 12-15 minutes or until lightly browned. Cool completely.
BAKING FILLING
Whisk all ingredients in medium sized bowl until fully combined. Poor filling into cooled crust and bake between 15-17 minutes.
The center of pie will jiggle slightly when shaken. Cool completely (approx. 30 minutes) and then place in refrigerator until fully chilled (approx. 2 hours)
MAKING WHIPPED CREAM
Beat cream until stiff peaks form. Gradually sprinkle in sugar and then fold in lemon zest.
